Colibri founders Eleonora Gottardi and Edoardo Freddi produce in a family estate located in Friuli Venezia Giulia. They are devoted to conservative and environmentally conscious viticulture form the foundation of their production philosophy.
Committed to cultivating vineyards under an organic certification regime, Colibri places particular emphasis on sustainable techniques. These include green manure, the use of beneficial insects to enhance biodiversity, and the integration of solar panels to supply energy for the cellar. This holistic approach underscores Colibri's dedication to fostering a more sustainable and environmentally friendly wine production process.
They source their organic grapes from vineyards of property, having full control over the entire processing - from grape selection to vinification, to dealcholization. We gently remove the alcohol using the best in-house technology that guarantees an excellent result, without compromising the flavour and quality of their wines.
